Winter Salads: Romaine with Chicken, Feta, Cranberries, Butternut Squash, and Crispy Fried Parsnips


School-Time Bella is different from Vacation Bella. School-Time Bella doesn't have time to cook, not with work and classes. But Vacation Bella makes us things like this salad for our Saturday lunch: grilled chicken, roasted butternut squash, feta cheese, dried cranberries, and crispy fried parsnip strips.

It all sounds good, but I'm most intrigued by the parsnips. Did she fry them herself? I'd love to try that.

Please do elaborate on the parsnip frying--roasting is all I have done (I liked it too much to go further!)

Bella made strips of parsnip with a carrot peeler and dropped them into a shallow skillet of hot oil. They just needed a few seconds of frying before they were crispy and light brown. Drain them on a paper towel, and sprinkle with salt. So good!
